Lolita K.; This soup is amazing and so easy to make! I followed the recipe exactly and found adding the juice of a whole lime was overpowering, the second time I made it I used half a lime and it tasted so much better.

Erika Clough; Absolutely delicious!!! I’m still Whole30’ing, so changed out ghee for butter and the rice to a bag of riced cauliflower added near the end. Just put it in long enough to soften a bit before finishing off with the cilantro and lime. I’ll be making this on many future occasions and look forward to trying with a few other veggies and chicken 👍🏻

Ashley; LOVE!!! Came out very tasty. My only suggestion is add more curry paste, especially if you’re someone who likes spicy. I added a teaspoon more and it was just right for me but i know my husband would definitely go for the full extra tablespoon. Also, i didnt have fresh ginger so i sub with ground ginger , 1/2 tsp. Next time will also use fresh for more flavor and try out a different brand of coconut milk. I used the Thai brand unsweetened lite.

Erin Kiernan-Johnson; This is definitely one of our family favorites that’s in our regular rotation. So easy and delish! The only thing I modify is adding a dash of fish sauce and a little brown sugar to give it that sweet/salty Thai flavor.
