Ginny Gaston; Made this tonight and liked it. My husband said, “what’s the seaweed in here?” Such a sweetie!! Anyway, I used frozen turkey broth and added a little “better than bouillon” chicken flavored. Also used shredded carrots which I chopped. Since I was doing this on the stove verses crockpot I put the frozen broth in a pan with the celery and carrots to cook them before adding to meat mixture. Pre-cooked the pasta and waited until close to serving to add in with the spinach. I also added the cornstarch directly to the meat mixture and some potato water I had, plus half and half, then at the end added some heavy cream vs milk. I didn’t add all the Italian seasoning (maybe 1-2 tsp) thought 1 Tbsp was too much. Added a little salt/pepper plus some celery salt and Nature’s Seasoning. Would make again, hubby said it was good.
Sami Renaud; Came out delish ! I used beefless ground from gardine instead of sausage to keep the texture and make it vegetarian. I also only used 1 can of evaporated milk. Some shredded cheese on top and crusty bread would make this even more amazing.
Brittany Dalton; This soup is definitely worth trying. Next time we plan to replace the sausage with chicken and add bacon bits with sun-dried tomato’s.
