Feel free to change up the vegetables (you’ll need about 3 cups total) and skip the kale if you want a more traditional Thai curry. This recipe is vegetarian, vegan and gluten free for all to enjoy.

Janelle Eckman; This was amazing. I added chicken and started with that first then added my onion and went from there. I seasoned the chicken with poultry magic and some salt. Otherwise I followed the recipe to the tee ( which I never do. Any one who knows me will tell you). One of the best of the best recipes I have made.
