My Mom’s Old Fashioned Vegetable Beef Soup is one of my all-time favorite comfort food recipes. It’s a homemade vegetable beef soup that’s quick and easy!
What people says about this recipe?
Abbey Young; Added a can of diced tomatoes, chopped onion instead of seasoning blend and used 2 bags of mixed vegetables rather than individual bags of each. I did my roast in the crockpot overnight, shredded it. Put everything else together and cooked it on the stovetop until tender, then added it in with the meat in the crockpot to keep warm. It’s good, but not like “my grandma’s vegetable soup” good.
Jennifer Wiggins; This was a family hit, young and old. I cooked the meat in the crockpot first then added the rest of the ingredients the last hour. I made minor changes by using 3 bags of frozen veggies and an onion soup packet. Then forgot about the potatoes and boiled a few separately and added them in at the end. It was delicious.
Robin Miller; Added a beef gravy packet and boulion cubes to it. Used more potatoes too. Wish I could have shredded the beef but I was in a rush! Other than that, tasted yummy.
Linda Klaczik; This was delicious!!!!! My crockpot was too small and could only add half bag of each veggie. Husband not fond of beef but this stew had him going back for seconds!!
Cissie Pitts Stancill; Really good recipe. I added a lot more veggies and cut the meat up and browned in flour so that the broth was a little thicker. Will make it again.
Nathasha Burns; I made this soup without the beef and it was still so yummy! I’ve made this soup for my husband and his buddies for deer season and it was definitely a hit. So simple yet so delish! I’ve added this recipe to my collection!
