I added half a chopped onion right at the beginning (simply because I had it in the fridge) and I added black beans when I put in the cheese and tortillas because hubby loves beans. I also bought a can of green sauce to try next time because this will be a regular dish in our house now. I only had to cook the chicken for about 3 hours on high with my crock pot, it could have gone the full 4 hours without it drying out though 🙂

Hollie Stover; I used pre-shredded Mexican blend cheese instead of cheddar, and used and extra 1/2 cup on both parts. I seasoned with Lawry’s Seasoned Salt, Mrs. Dash’s garlic and herb blend, pepper, and a vegetable blend seasoning, and used the “hot” Old El Paso enchilada sauce. It made 4 servings (but they were big servings), and it was absolutely delicious!!! 5 stars.

Emily Peters; I made this into a casserole. It was so yummy. Cooked hamburger added taco seasoning. Layer tortillas, meat, enchilada sauce, cheese, repeat. Bake 375 for 30 mins until bubbly, add black olives and cook another 5-10 mins. Serve with lettuce and sour cream.
