Lindsay Sewell; Turned out great. I know this was originally intended as being a side but we made it into burritos because we are vegetarian. I used chives instead of cilantro, I can’t stand cilantro. I also used Monterey Jack Cheese to top it off. It was delicious, next time I may add more cumin.
